9 Lockdown Recipes The Men’s Health Team Has Tried And Loved

Your meals don't have to be boring during this time, these tried-and-tested lockdown recipes are winners.

Lockdown has a lot of people spending more time experimenting in the kitchen and there might be a scientific reason for that. A study published in the Journal of Positive Psychology found that people who did everyday, creative things like cooking and baking were happier and more enthusiastic about the next day. Which is something we could use a little more of – with lockdown being extended.

But that doesn’t mean your meals have to be boring during this time, these tried-and-tested lockdown recipes are winners according to the MH team.

Recipe 1: The Ultimate Chicken Burger

“I had chicken in the freezer and sweet potato I needed to use and I couldn’t bear to eat the universal meal of gym bros (chicken breast and baked sweet potato) so I did some googling and found this recipe and boy, am I glad. I’ve made it twice already and sent the recipe to so many people I know. Essentially, you’re not adding anything to a chicken breast except spices, but mincing the chicken and adding those spices seriously makes it a winner. I don’t think I will ever eat a chicken breast again,” – Kelleigh Korevaar, Features Writer

Top Tip: You don’t need to buy chicken mince, you can make your own. Take your chicken breast out of the freezer and let them defrost. When they are almost defrosted, cut them into cubes and place them into a food processor and blitz. That’s it, you have chicken mince. After I made these burgers, I then used the same concept to make chicken meatballs for a pasta.

Recipe 2: #LockdownBananaBread

“Yes, I joined the ranks of the #Lockdown #BananaBread brigade on the weekend. I legit had some vrot bananas and rather than toss them away, I decided to put them to (deliciously) good use. I got this recipe from a cousin who makes it literally every week. It’s super easy and (aside from the cooking time) is really quick to throw together. Sure, it’s not the healthiest of recipes, but I worked my slice off by doing the MH Lockdown Challenge (join the challenge here) that evening. Plus, it was a huge hit with the whole family and made the afternoon just that little bit sweeter.” – Kirsten Curtis, Contributing Digital Editor

Ingredients:
  • 2 cups flour
  • 125g butter/marge
  • 2 eggs
  • 3 or 4 over-ripe bananas (seriously, the vrotter the better)
  • 1 cup sugar
  • 1 heaped tsp baking powder
  • 1 level tsp bicarbonate of soda
  • Pinch of salt

Directions:

Preheat the oven to 160C. Cream butter and sugar. Add mashed bananas. Beat well. Add beaten eggs. Sift flour and salt and add to mixture with 1/4 cup water in which bicarb has been dissolved. Beat well. Lastly, add baking powder. Bake in a greased loaf tin for 1 hour. Slice and serve with butter.

Recipe 3: Healthy Brownies

“I really didn’t expect these to work considering how many ‘healthy brownie’ recipes I’ve followed and failed at. They’re usually either too expensive to make, use a wide array of ingredients or just taste a lot like banana. But this recipe uses only four ingredients so it’s extremely simple to make and it is so damn fudgy. Plus, it has all the trendy names attached to it; vegan, gluten free and paleo.” – Kelleigh Korevaar, Features Writer

Top Tip: If you’re lazy like me and always looking for a shortcut (maybe that’s why my recipes fail a lot), use the Woolworth’s Frozen Sweet Potato Mash. It means you won’t have to go through the process of cooking and mashing a sweet potato because it’s already done for you. All you have to do is pop some in the microwave for a few minutes and you’re sorted.

Recipe 4: Ponzu Basa & Noodles

Recipe 5: Sticky Chicken Wings

“This is super easy but so good and satisfies your craving if you’ve been missing your favourite takeout joint a little too much during this time.” – Nadia Windt, Fashion Assistant 

Ingredients:
  • +- 1 kilogram wings
  • 1 cup flour
  • 1 tsp chilli powder
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
Sauce Ingredients:
  • 1 cup BBQ sauce
  • 1/2 cup honey

Directions:

Preheat the oven to 220C. Mix all of the dry ingredients in a large bowl. Toss your wings into the flour mixture until fully covered. Place the wings on a greased baking tray and bake for 45 minutes. Flip the wings over half way through baking. While your wings are baking, combine the bbq sauce and honey in a pot and bring to the boil. Once your wings are baked, toss them in the sticky sauce. Place them back into oven for another 8-10min at 260C.

Recipe 7: Healthy Apple Crumble

“If you’re having a bad day, a warm bowl of apple crumble can make you feel a whole lot better. But they are usually loaded with butter and sugar which is probably why they make you feel so good. This recipe is a healthy alternative that still tastes great. Plus, if you’re like me and bought apples for lockdown and then realised after a while they were just lying around not being eaten, this is a great way to use them up.” – Kelleigh Korevaar, Features Writer

Top Tip: If you don’t have cornstarch in your cupboard (I didn’t), you can just use plain old flour. It’s important because it helps to thicken the apple juices and create that famous apple filling. The general rule is to use 2 tablespoons of flour for every 1 tablespoon of cornstarch that the recipe calls for as flour doesn’t have the same thickening ability.

Recipe 8: My Mom’s Roast Chicken

Nothing beats a Sunday roast. But what makes it even better is when you’re using a secret family recipe that’s been passed down. Don’t have one of those? You’re in luck because MH Editorial Director, Danielle Weakley, is sharing her mom’s roast chicken recipe.

Ingredients:

  • A bird of the plucked variety, not a hot date (although this will impress those too)
  •  2 TBS olive oil
  • 1 TBS lemon juice (fresh is better so you can stick the rest of the whole lemon in the chicken’s butt)
  • 2 tsp chicken spice
  • 1/2 tsp curry powder
  • A good grinding of salt

Directions:

  1. Set the oven to 180 degrees.
  2. Mix the ingredients together and paint onto the chicken.
  3. If you want to make a gravy to serve, then quarter an onion and two large carrots and rest the bird on top of them to roast. If gravy is not your thing, then just pop the bird in a roasting dish and straight into the oven.
  4. Roast the chicken for two hours at 180 degrees.
  5. When done, leave your bird to rest for a few minutes before carving.
  6. This is a great time to do your gravy, if you’re whipping that out the bag. Strain any fat off the liquid in the roasting dish and the onions and carrots (although I like to mash some of the carrots and onions into the gravy because: flavor!) and pop it in a small pot on the stove. Add a bit of stock or perhaps a splash of wine and if it needs thickening – it usually does – then add some cornstarch (whisk a teaspoon of it into a bit of water to make is soluble and then add to the gravy). It shouldn’t take longer than a few minutes.
  7. Then carve, plate and serve with mashed potatoes or a side of greens. Or just a beer really.

Recipe 9: Curry Pasta

“This may not be the healthiest offering but it’s really good. And vegetarian, too so it’s perfect for #MeatFreeMondays. My secret? It’s even better the day after, so if you can make it ahead and leave it in the fridge.” – Nadia Windt, Fashion Assistant 

Ingredients:

  • 500g shell pasta
  • 1 large onion, finely chopped
  • 1 large pepper (any colour you prefer), cut into small strips

Sauce Ingredients:

  • 250ml tomato sauce
  • 200ml sugar
  • 125ml oil
  • 125ml white vinegar
  • 25ml curry powder
  • 7ml salt
  • 3ml pepper
  • 2ml tabasco sauce

Directions:

Cook pasta until done, then add chopped onion and peppers. In a separate pan, mix all the ingredients for the sauce and bring to a boil. Mix the warm sauce with the noodles and allow the sauce to absorb into the pasta. Allow the pasta salad to cool down in the fridge and serve once cold.
