“This is one of the coolest, easiest dishes I have discovered through banting/LCHF/keto. It makes a wonderful, fast breakfast, snack or something for your lunchbox,” says South African actor Armand Aucamp, who features this keto breakfast recipe in his cookbook.

Plus, the great thing about this recipe is that it’s extremely versatile. “I usually use streaky bacon for its high fat content but any bacon will work,” he says. “And if you have some leftover vegetables you can throw them in there, too. In that case, I like to break the egg up with a fork and add in my finely chopped vegetables like mushrooms and red peppers.”

Tip: “The high brine content in the bacon could create moisture in the muffin tin so if you have the time and the will, you could first fry it in a frying pan, or use any type of ham instead.”
