This recipe, adapted from San Antonio chef Jason Dady, bumps up the protein with brisket. Dady serves his in a 100cm paella pan, but a 46cm pan will work. Best part? About The Brisket

You can probably hit up a deli and buy the whole pre-cooked brisket. Or you can smoke it yourself. The best method: in a bowl, mix 4 tsp kosher salt, 1 tsp brown sugar, 1 tsp paprika, 1 tsp ground cumin, 1 tsp garlic flakes, and 1 tsp ground black pepper. Rub the brisket all over with this mixture and refrigerate until ready to cook. Preheat your smoker or Weber to 150°C. Set the brisket on the grid, fat side up. Maintain that temperature, adjusting vents or adding fuel, until the brisket reaches 70°C, 3 to 4 hours. Wrap in foil to transport or rest 15 minutes, then serve.
