Some things get better with age, and these dark spirits are no exception. We’ve tapped the cask so that we can barrel up on the bold-flavoured benefits of these cognac and whisky cocktails.

Unlike popular craft gins that are infused with rosemary, peppercorns, and plants that wouldn’t look out of place in your grandmother’s home, darker spirits usually make use of very few ingredients.

That makes the wood they are aged in all the more important as it adds distinct flavour notes. And we’re here to help you learn from this neck of the woods. You see, each of the below bottles is aged a little differently to produce something that you’ll want to savour.

But it’s not all about the casks, of course. The cognac and whisky cocktails that follow are made with the booze above, but you can use any you have on hand. They were created by Steven Zylstra and are packed with flavour and health benefits. Come over and join the dark (spirit) side!

Maker’s High Ball

American White Oak: This wood is seasoned for nine months outdoors before the barrels are fired for 40 seconds to open the staves’ pores and caramalise the natural wood sugars. This gives Maker’s Mark the vanilla notes it’s known for.

Ingredients:

  • Maker’s Mark Bourbon Whisky, 50ml
  • Lemon Juice, 25ml
  • Bottings Apple & Ginger Puree, 35ml
  • Peach ice tea, to top up with
  • Apple cider, to top up with
  • Pineapple slice, to garnish

Method:

This cocktail is one that you build rather than shake or stir (so it’s easy to make). Add all the ingredients into a highball glass with ice. Garnish with a pineapple slice. The apple, ginger and lemon form a trio of health-boosting ingredients that can assist in weight loss.

Auchie & Ale

American oak: Scotch whiskey is typically matured in old bourbon barrels (like the Maker’s Mark bourbon below). As a result, Auchentoshan American Oak takes on the sweet aromas of the bourbon’s vanilla notes, with the addition of coconut.

Ingredients:

  • Auchentoshan American Oak Scotch Whisky, 50ml
  • Lemon Juice, 25ml
  • Honey syrup, 25ml
  • Your favourite ale
  • Orange slice, to garnish

Method:

Add the scotch, juice and syrup to a mug filled with ice. Top up with an ale of your choice. Garnish with an orange slice. Bonus: this makes a great “recovery” drink. A study saw no difference between those who drank water versus a low-ABV beer after exercising in the heat.

Courvoisier Espresso Martini

French fine-grained oak: Courvoisier V.S.O.P. cognac spends several years in French fine-grained oak barrels, developing nutty notes and aging to produce a sweet, caramelised, toasted almond flavour.

Ingredients:

  • Courvoisier V.S.O.P, 35ml
  • Coffee liqueur , 15ml
  • Espresso (cooled), 30ml
  • Sugar syrup, 10ml
  • Orange peel, to garnish 

Method:

In a Boston glass, add the ingredients in the order listed above. Add ice and cap the glass with a metal shaker. Shake very hard for eight seconds and strain into a coupe or martini glass. Garnish with a slice of vitamin C-rich orange peel. The hero of this cocktail is the coffee which is known to promote mental sharpness and protect your ticker.

Maple & Bacon Old Fashioned

French oak staves: Maker’s Mark 46 is made from the fully matured Maker’s Mark from above. They then insert 10 seared virgin French oak staves into the barrel and finish it for nine weeks. This process snags you hints of wood staves and caramel.

Ingredients:

  • Maker’s 46, 50ml
  • Maple syrup, 1.5 tsp
  • Bitters, 3 dashes
  • Crispy maple bacon slice, to garnish

Method:

The good ole’ fashioned gets a healthy upgrade. Bacon contains vital nutrients like thiamin, vitamin B12, zinc and selenium. Add the Maker’s Mark 46, maple syrup and bitters into a tumbler. Top up with ice and stir for 1 minute with a bar stirrer if you own one. Refill the glass with ice. Garnish with a slice of maple-coated crispy bacon.
