Cheese beef burger with crispy Parmesan and a fried egg on a brioche bun. Makes 4.

What You’ll Need

  • 800g beef mince
  • 1 tbsp dijon mustard
  • 1 onion finely chopped
  • 1 tsp fennel seeds, crushed
  • 1 tsp dried chilli flakes
  • Small handful thyme, leaves chopped
  • Salt and pepper

Toppings

  • Parmesan crisps
  • Red onion shavings
  • Pickles
  • Lettuce
  • Egg
  • Mustard Mayo

Method

Combine all the ingredients in a large bowl. Divide the mixture into 4 and shape into burger patties. Place in the refrigerator to chill for 30 minutes. Heat a pan to medium-high heat and cook in batches; fry until golden and cooked the way you like it.

Gone Fishing

Tuna steak and chimichurri on a pretzel bagel. Makes 4.

What You’ll Need

  • 600g tuna fillets
  • Olive oil
  • Fresh lime

Toppings

  • Chimichurri
  • Smashed tomatoes
  • Garlicky mayo
  • Lettuce

For The Chimichurri

  • 1 cup fresh parsley, leaves chopped
  • 3-4 garlic cloves, minced
  • 2 tbsp fresh oreganum leaves (or 2 tsp dried oreganum)
  • 1⁄2 cup olive oil
  • 2 tbsp white wine vinegar
  • 
1 tsp red chilli flakes
  • Salt and pepper

For The Smashed Tomatoes


  • 2 cups cherry tomatoes
  • 2 red chillis, sliced
  • Olive oil
  • Salt and pepper

For The Garlicky Mayo

  • 1/2 Cup mayonnaise
  • 2 cloves garlic minced
  • Juice of 1 lime

Method

Drizzle olive oil over the tuna fillets and season. Add in batches to a pan heated high and sear for roughly 2 minutes on each side depending on the thickness of the piece. Remove from the pan and squeeze some fresh lime juice over. Chimichurri: Combine all ingredients and mix well. Smashed Tomatoes: Flash fry the tomatoes in a high-heated pan with a little olive oil until bursting. Bangin’ Bun

Chicken, avo and red cabbage slaw on a sourdough bun. Makes 4.

What You’ll Need

  • 4 chicken breasts sliced in half lengthways
  • olive oil
  • salt and pepper
  • 3 tsp smoked paprika

Toppings

  • red cabbage slaw
  • 2 avocados, smashed
  • harissa mayo

For The Slaw

  • 1⁄2 small red cabbage sliced
  • 2 carrots, grated
  • 2 spring onions, sliced
  • 2 tbsp dijon mustard
  • 1 tbsp apple cider vinegar
  • 3 tbsp mayonnaise

Method

Rub the chicken breasts with olive oil, season and generously sprinkle over paprika. In a pan heated medium-high, fry the chicken breasts with a little more olive oil until cooked through and golden. Slaw: Combine all the ingredients.

Wild Bird

Ostrich pesto burger on a Portuguese bun. Makes 4.

What You’ll Need

  • 800g ostrich mince
  • 3 garlic cloves minced
  • 1⁄2 cup tomato, chopped
  • 1 tbsp soy sauce
  • 
1 tbsp Worcestershire sauce
  • small handful parsley, leaves chopped
  • 1⁄2 cup bread crumbs

Toppings

  • pickled jalapeños
  • sundried tomato pesto
  • 2 tomatoes, sliced
  • lettuce

Method

Combine all the ingredients in a large mixing bowl. Divide the ostrich mixture into 4 equal patties and refrigerate for 30 minutes to firm up. Cook on medium-high until golden.

Insane In The Grain

Quinoa and red pepper burger on an English muffin. Makes 4.

What You’ll Need

  • 11⁄2 cups quinoa, cooked
  • 1⁄2 red onion, finely chopped
  • 3 carrots, grated
  • 11⁄2 cups broccoli, chopped
  • 1⁄2 cup shiitake mushrooms, chopped
  • 1 cup corn kernels
  • 3 egg whites
  • 
3-4 tbsp flour
  • salt and pepper

Toppings


  • herb mayo
  • roasted red pepper
  • relish
  • iceberg lettuce sliced
  • alfalfa sprouts

For The Herb Mayo

  • 1⁄4 cup mayo
  • handful fresh basil
  • handful fresh parsley
  • 1 tbsp chopped chives
  • salt and pepper to taste
  • 1⁄2 lemon juice

For The Red Pepper Relish


  • 2 red peppers
  • 1 cup cherry tomatoes
  • 1⁄2 red onion
  • 1 birds eye chilli
  • salt and pepper

Method

Mix all the pattie ingredients together, adding extra flour if the mixture is too wet. Form into 4 to 6 thick patties and rest in the refrigerator for 30 minutes. Fry in a little oil until golden and crisp, 3-4 minutes per side. Herb Mayo: Roughly chop all the herbs and then mix with the mayo, lemon juice and salt and pepper to taste. Red Pepper Relish: Roughly chop all the ingredients. Add everything to a pan with a little olive oil and cook until soft. Season to taste.
