A classic Brazillian drink, it can be made with a variety of fresh fruits, condensed milk and Cachaça, a traditional spirit made from sugar cane. 35ml Cachaca (or substitute Light Rum) 25ml Condensed Milk 15ml Lemon Juice 50ml Granadilla Pulp (Fresh or tinned) 15ml Passion fruit liqueur (optional)
Somewhere between a Mojito and a classic Daiquiri, this frozen cocktail is balanced and refreshing with a hint of minty freshness that is perfect for summer. 50ml Light Rum 25ml chilled mint Syrup* Lemon Juice
Combine equal parts sugar and water in a pot. Heat and stir until sugar is dissolved. Add a bunch of washed mint and allow to simmer for 5-10mins. Strain mint before chilling.
Tia Maria gives a rich, dark complexity to the drink but can be omitted for a non-alcoholic version as well. 50ml Tia Maria 150ml Cold Brewed Coffee 75ml Milk 2 tbsp Sugar
This sweet and sour cocktail creates a sorbet-like base that balances the tartness of lemon with the rich, blackcurrant flavours of Crème de Cassis. 25ml Irish Whiskey 25ml Crème de Cassis 100ml Lemon Juice 50ml Sugar Syrup In a separate cocktail shaker combine whiskey and Crème de Cassis. Shake well with ice. Strain over the lemon mixture.
