Use this simple technique to create a tasty, silky dip that blows away the pre-made stuff in the tub.
1 Set The Foundation
Whole ingredients make great hummus. Save the liquid from a can of chickpeas and rinse them. Dump them into a food processor or blender with 1½ cups of tahini.
2 Smooth It Out
Purée with ½ cup olive oil and ½ cup freshly squeezed lemon juice. Slowly add the reserved liquid from the can until the hummus is creamy. Season to taste with Maldon salt and cumin powder.
3 Top It Off
Add flavour and substance by including extras like sautéed mushrooms or sliced hard-boiled eggs. Scoop the hummus onto a plate, make a well in the centre, and spoon the extras into the well. Serve with warmed pita and beer.
