Pineapple and red onion chutney

1 pineapple
½ red onion
1 green chilli
1cm ginger, grated
1 tsp sugar
Squeeze of lime juice

Peel the pineapple, and then core and dice it. Salt and leave for 15 minutes. Slice red onion into half rings, finely chop the chilli, then mix the onion and chilli with the garlic, lime juice and sugar. Rinse the pineapple and add to the other ingredients. Taste and adjust for seasoning.

Cucumber raita

½ cucumber, grated
1 clove garlic, ground into a paste
Handful of mint, chopped
Salt and pepper
1 cup low-fat yoghurt, drained
Add salt to cucumber, squeeze out the juices from the cucumber, add the garlic, yoghurt, mint and pepper.

Carrot salad

3 carrots, peeled and grated
Juice of 1 lime
2 tsp cumin seeds
1 bay leaf
1 tsp sugar
1 tbsp vegetable oil
Handful of fresh coriander
1 handful peanuts, chopped (or use flaked coconut)

In a small pan, gently heat the oil, add cumin seeds and bay leaf. When cumin becomes fragrant, pour the hot oil over the carrots along with the seeds, add the other ingredients, taste and adjust for seasoning.
