HOW TO FRITTATA: Preheat the oven to 190°C . Grease a large ovenproof frying pan or a round cake pan. In a large bowl, gently whisk 8 large eggs with ⅓ cup low-fat milk until blended. Stir in your desired vegetables and cheese, and season with ½ tsp each of salt and pepper. Pour the mixture into the pan and bake until the frittata is set, about 25 minutes. Let it cool for 10 minutes before cutting into wedges. Makes 4 servings.

1 cup spinach, chopped, cooked and squeezed dry • 120g soft goats’ cheese, crumbled • 2 tbsp pine nuts
½ cup bottled green chillies, drained and chopped • ½ cup white cheddar, grated • ¼ cup spring onions, chopped
