Ingredients for satay
• 1 breast, cooked and diced
• 3 makrut lime leaves
• 1 stalk lemon grass,
roughly chopped
• 1/2 red chilli, deseeded
• 1/2 clove garlic
• 50g smooth peanut butter
• 1 tbsp each turmeric, ginger
• 100ml coconut milk
• 10g brown soft sugar
• 1 tbsp fish sauce
• 50g salted roasted peanuts,
crushed

Method
1) Blend all the ingredients (apart from the chicken and peanuts) in a food processor to make a paste. Pour half into a bowl and mix with the nuts and chicken breast.
2) Thread four chicken pieces onto skewers. Brush them with the remaining marinade and cook under a hot grill for 8 minutes.

Ingredients for salad
• 1 cucumber, ribboned
• 1 tbsp grated ginger
• 2 tbsp sesame oil
• 2 tbsp sweet rice vinegar
• 2 tbsp rice vinegar
• 1 tbsp sesame seeds,
toasted

Method
Put all ingredients in a bowl, mix, leave to marinate for 5 minutes.
