Breakfast: Scrambled eggs, peppered mackerel and fresh tomatoes


2 eggs
1 tbsp Clover 1% milk
1 tbsp fresh chives, chopped
1 tbsp olive oil
2 slices of Sasko Low-GI
wholewheat bread
½ peppered mackerel fillet, sliced
1 tomato, sliced
Salt & pepper


Place the eggs, milk and chives into a bowl and lightly whisk. Season to taste. Heat the oil in a non-stick pan over a medium heat. Pour in the eggs and cook, stirring occasionally until just set. In the meantime, toast the bread. Heap the scrambled eggs on the toast, top with the peppered mackerel and fresh tomato and serve immediately
