Try this delicous and Dr-approved baked Salmon Trout Recipe.

“It’s a fast and easy dinner that combines healthy fats and 
protein from the salmon and fibre from the quinoa,” says Dr Jordan D. Metzl, a sports physician at New York’s Hospital for Special Surgery. “I usually have it with a side 
of sautéed spinach 
or a salad.”

2 skinless wild salmon trout fillets 
½ tsp salt
⅛ tsp freshly ground
⅓ cup quinoa
zest of 1 lemon 
2 tbsp lemon juice 
2 tbsp butter 
1 tsp extra-virgin olive oil 
1 tsp poppy seeds 
1½ tsp chopped fresh

1. Heat the oven to 230°C and coat a rimmed baking sheet with cooking spray. Season the fish with the salt and pepper.
2. Place the salmon, skin side-down on the pan and bake until cooked through, 12 to 15 minutes. Meanwhile, cook the quinoa according to the package directions.
3. Toss the quinoa with the lemon zest, lemon juice, butter, oil, poppy seeds, and salt and pepper to taste.
4. Divide the quinoa between two plates. 
Top each pile with salmon, a squeeze of lemon and parsley.
