These are truly dark times for salad dressing.
The evidence is right there on the ingredient list: after soybean oil (a nutritionally inferior fat), you’ll likely find a list of thickeners, binders and preservatives – chemical additives that allow the dressing to last months without refrigeration. A bottle like that might work in a pinch, but why settle when it takes five minutes to make your own dressing? The reward is more flavour, more health-promoting ingredients, and – for a bottle’s worth of dressing – more than 4 000 kilojoules in savings.
For all dressings, combine ingredients in a medium bowl and stir until uniform. They’ll keep in the fridge up to two weeks.
